All food establishments shall install and maintain in good working
order a device which complies with the regulations of the Water and
Sewer Department for the treatment of grease. Failure to comply with
the Water and Sewer Department regulations for treatment of grease
shall be punishable by a fine of $100 for each offense. Each day that
noncompliance continues shall be deemed a separate offense. This chapter
may also be enforced through noncriminal disposition under Chapter
1.08.
