Grease traps shall be required for all establishments engaged
in food preparation and connected to the Village sanitary sewer system,
except that such traps shall not be required for private living quarters
or dwelling units.
The Village Wastewater Treatment Department shall implement
an inspection schedule for all establishments engaged in food preparation
and shall be permitted to enter all properties for the purpose of
inspection, observation, measurement and/or testing.
A.
Records shall be maintained on site for inspection by the Superintendent
or other duly authorized employees of the Village. These records shall
show dates of cleaning and the contractor performing the cleaning,
clearly marked on the company bill of sale or letterhead.
B.
Failure to comply with any and or all parts of this regulation will
constitute a violation. Each day in which any such violation shall
continue shall be deemed a separate offense.
Any person violating any part of this regulation shall become
liable to the Village for any expense, loss or damage occasioned the
Village by reason of such violation.
