It is the purpose of this chapter to promote the public health, safety and general welfare and to minimize public and private losses caused by the clogging of the village drainage system by grease or chemicals.
A. 
A grease interceptor and separator shall be installed at the time of construction in the waste line leading from the sinks, drains or other fixtures of restaurants, hotel kitchens, bars, factory cafeterias, clubs or other commercial establishments where the nature of the activities conducted therein provide the possibility of grease or chemicals being introduced into the village drainage systems in a manner or quantity sufficient to affect line stoppage or hinder disposal of sewage.
B. 
A grease interceptor and separator shall be installed in the waste line leading from sinks, drains or other fixtures in existing establishments when in the professional judgment of the Building Inspector, or a professional engineer retained by the village, it is required to prevent line stoppage or blockage of the village drainage system.
C. 
In both instances it shall be the sole responsibility of the owner of the establishment to provide at all times for the proper maintenance and operation of the grease interceptor and separator.
A. 
The penalties set forth in Article III of the General Provisions Chapter of this Code[1] shall be applicable to any violation of this chapter.

B. 
The continued violation of this chapter shall constitute a separate violation for each successive day from the date set forth for the installation of the grease interceptor or separator until such device is installed.
