All food-service establishments shall purchase and properly install dishwashing machines.
Dishwashing machines shall be designed and capable of properly cleaning and sanitizing dishes, bowls, glasses, cups and utensils.
Food-service establishments that serve or use one-way plastic or paper dishes, cups and beverage containers are exempt from the provisions of this article.
Failure to comply in accordance with the provisions of this article may result in immediate suspension of the permit.
